Today I got up early to go pick Annika up from her fall Girl Scout camp, which had a Cake War theme. She learned about baking and cake decorating and won the “Most Clever” cake award. She made a Superman cake with yellow cake and Cocoa Puffs. It was very good!
While I did try her cake, I’ve been really careful about what I eat recently in an attempt to be more healthy, feel better, and fit into my winter clothes again. It’s been working: I have been feeling a lot better. I have had far fewer problems with my GI system, less reflux, and I feel like I have a little more energy. I still crave sugar and treats, but I can’t eat as much as I used to be able to eat. I have been doing better at meal planning, mainly meaning that I’ve been making soup and other food on Sundays for the week. Today I made 15 bean soup, even though I can’t even name that many beans off the top of my head. It is a nice, hearty soup that is filling all by itself. I need to broaden my cooking ability beyond soup sometime, but veggie-based soups are really good right now with the cool weather.
I have a lot on my mind and wish I had time to write, but I’m tired from being up so long. Here’s a picture of Annika swimming in a corn pit to cap off the night.
